Détails: To “eat Cuban†? is to savor a deliciously complex culinary culture. Spanish, Native American, African, Chinese, and French traditions have all contributed to Cuban cooking, producing a distinctive Caribbean cuisine as richly chorded as the island’s music. Beverly Cox and Martin Jacobs’s itinerary takes them from the barrio, paladars (private restaurants), and chic nightspots of Havana to the eateries of Florida’s emigré communities. From their journeys, they’ve gathered more than 120 recipes that comprehensively document Cuban cooking’s diversity, from the black bean soup found on any Cuban table, to the empanadas sold by Havana’s street vendors, to the grilled sandwiches that are a mainstay of Miami’s Calle Ocho, to the innovative dishes devised by chefs at top Cuban restaurants. Gorgeously illustrated with Jacobs’s photographs —many shot on the authors’ travels through Cuba—Eating Cuban highlights Cuban food’s historical roots, the classic Creole dishes that evolved from these disparate cultural influences, current trends in Cuban cooking, street foods and on-the-go snacks, and quintessential Cuban beverages from café Cubano to the mojito. A valuable resource list helps American cooks locate the required ingredients, and a restaurant directory points the way to the very best in Cuban cuisine—in Cuba and the U.S.

Détails: The Oxford Companion to Food by Alan Davidson, first published in 1999, became, almost overnight, an immense success, winning prizes and accolades around the world. Its combination of serious food history, culinary expertise, and entertaining serendipity, with each page offering an infinity of perspectives, was recognized as unique. The study of food and food history is a new discipline, but one that has developed exponentially in the last twenty years. There are now university departments, international societies, learned journals, and a wide-ranging literature exploring the meaning of food in the daily lives of people around the world, and seeking to introduce food and the process of nourishment into our understanding of almost every compartment of human life, whether politics, high culture, street life, agriculture, or life and death issues such as conflict and war. The great quality of this Companion is the way it includes both an exhaustive catalogue of the foods that nourish humankind - whether they be fruit from tropical forests, mosses scraped from adamantine granite in Siberian wastes, or body parts such as eyeballs and testicles - and a richly allusive commentary on the culture of food, whether expressed in literature and cookery books, or as dishes peculiar to a country or community. The new edition has not sought to dim the brilliance of Davidson's prose. Rather, it has updated to keep ahead of a fast-moving area, and has taken the opportunity to alert readers to new avenues in food studies.

Détails: With a hint of philosophy, a dash of insanity, and a woman who could make Gauguin's mouth water, this novel takes the usual ingredients of history and tosses them into the air. Welcome to the beautiful French colony of New Zealand! OK, so it never happened. But it nearly did . . . Welcome to beautiful French New Zealand - a paradise of vineyards, cafes and forest conservation. The year is 1930. Lieutenant Verdier is travelling from Sainte Chapelle in the south to New Lyon in the north to take up a new posting as chauffeur to the Resident Governor. The sun is shining, the war in Morocco is just a distant memory, and although he has doubts about his new employer, at least Verdier can look forward to driving the latest Citroen. The only problem is Wellington, where a few disgruntled English still remain, grumbling that the colony should have been theirs, and charging everyone a fortune for insurance. As soon as Verdier can, he escapes to the glorious scenery and welcoming people of the National Park. Then someone steals his car. And instead of passing through the park, Verdier embarks on a journey up its winding rivers and tortuous tracks to where Titoko and Marama are waiting, as if they always knew he would come. The French language edition of Son of France was awarded the Prix Popai for best foreign novel at the Salon International du Livre Ocanien, New Caledonia, in 2005.

Détails: Kitchen experts assure that there is a cooking mode indicated for each vegetable and that it goes beyond the traditional boil. A fun and different way of eating vegetables could help to introduce them into the daily diet, something that is not always easy, especially if you want children to eat them regularly. One of the ideal dishes for spinach and chard leaves is to make them crunchy. This type of cooking results in a garnish based on very finely cut and fried vegetable leaves. It is a preparation especially suitable to accompany grilled fish or to make salads with different textures. Before buying the products of the garden, it is interesting to know which are the vegetables corresponding to the different seasons of the year. For better conservation and hygiene we must always put the vegetables in plastic bags. These are some tricks to choose vegetables and vegetables in a proper way: 1. Lettuce provides thick, uniform green leaves . Depending on the smell that emanates will be the flavor. Its conservation will be more effective if we leave it inside the steel bag from the supermarket and put it in the fridge. 2. The potatoes must not show sprouts or be beaten . We will select the appropriate tuber for the use that we are going to give it. Thus, we will choose the brown potatoes to roast and the yellow ones to boil, and the white and red ones to fry. Conservation should be done in a dark and cool place, away from the onions. 3. Asparagus must be tender, green or white depending on the variety, and of medium size . The conservation is optimal in the refrigerator for several days if we put the base of the stem in water. 4. The color of broccoli or broccoli is dark green at the stem and bluish green at the end of the flower . This vegetable is kept in perfect condition for fifteen days in the refrigerator. 5. Endives should be bright green on the leaves and white near the root . We must avoid those with dark green spots or those with wrinkled or pale leaves. 6. Endive has bright, uniform green leaves . We should not buy those that are excessively dirty or have suffered the attack of insects. 7. It is important not to buy all the tomatoes of a red color . It is preferable to buy some greener ones to consume them as they mature. Proper conservation in the fridge will allow us to have the product in perfect condition for a week. 8. The best quality carrot is found in bunches . It must have a hard, firm consistency and an intense orange color that indicates its high level of beta-carotene. 1

Détails: The Basque Country is a land of fascinating paradoxes and enigmas. Home to one of Europe's oldest peoples and most mysterious languages, with a living folklore rich in archaic rituals and dances, it also boasts a dynamic post-modern energy, with the reinvention of Bilbao creating a model for the twenty-first-century city of cultural services and information technologies. Hugging the elbow of the Bay of Biscay on both the French and Spanish sides of the Pyrenees, this small territory abounds in big contrasts, ranging from moist green valleys to semi-desert badlands, from snowy sierras to sandy beaches, from harsh industrial landscapes to bucolic beech woods. This often idyllic scenery is the stage for fierce political passions. Almost every aspect of the Basque Country generates passionate disagreement, even its precise location. Spanish and French centralism, often authoritarian and sometimes brutal, has met with resistance for two centuries. Most recently and notoriously ETA, a terrorist group with deep popular support, has engaged in a bloody 45-year conflict. But many Basques consider themselves full French or Spanish citizens, and fear political and linguistic exclusion under Basque nationalist rule.

Détails: Foodservice industry operators today must concern themselves with the evolution of food preparation and service and attempt to anticipate demands and related industry changes such as the supply chain and resource acquisition to not only meet patrons' demands but also to keep their competitive advantage. From a marketing standpoint, the trend toward a more demanding and sophisticated patron will continue to grow through various factors including the promotion of diverse food preparation through celebrity chefs, mass media, and the effect of globalization. From an operational standpoint, managing and controlling the business continues to serve as a critical success factor. Maintaining an appropriate balance between food costs and labor costs, managing employee turnover, and focusing on food/service quality and consistency are fundamental elements of restaurant management and are necessary but not necessarily sufficient elements of success. This increasing demand in all areas will challenge foodservice operators to adapt to new technologies, to new business communication and delivery systems, and to new management systems to stay ahead of the changes. Strategic International Restaurant Development: From Concept to Production explains the world of the food and beverage service industry as well as industry definitions, history, and the status quo with a look towards current challenges and future solutions that can be undertaken when developing strategic plans for restaurants. It highlights trends and explains the logistics of management and its operation. It introduces the basic principles for strategies and competitive advantage in the international context. It discusses the food and beverage management philosophy and introduces the concept of food and beverage service entrepreneurship, restaurant viability, and critical success factors involved in a foodservice business venture. Finally, it touches on the much-discussed topic of the food and beverage service industry and sustainable development. This book is ideal for restaurateurs, managers, entrepreneurs, executives, practitioners, stakeholders, researchers, academicians, and students interested in the methods, tools, and techniques to successfully manage, develop, and run a restaurant in the modern international restaurant industry.

Détails: “The one food book you must read this year." —Southern Living One of Christopher Kimball’s Six Favorite Books About Food A people’s history that reveals how Southerners shaped American culinary identity and how race relations impacted Southern food culture over six revolutionary decades Like great provincial dishes around the world, potlikker is a salvage food. During the antebellum era, slave owners ate the greens from the pot and set aside the leftover potlikker broth for the enslaved, unaware that the broth, not the greens, was nutrient rich. After slavery, potlikker sustained the working poor, both black and white. In the South of today, potlikker has taken on new meanings as chefs have reclaimed it. Potlikker is a quintessential Southern dish, and The Potlikker Papers is a people’s history of the modern South, told through its food. Beginning with the pivotal role cooks and waiters played in the civil rights movement, noted authority John T. Edge narrates the South’s fitful journey from a hive of racism to a hotbed of American immigration. He shows why working-class Southern food has become a vital driver of contemporary American cuisine. Food access was a battleground issue during the 1950s and 1960s. Ownership of culinary traditions has remained a central contention on the long march toward equality. The Potlikker Papers tracks pivotal moments in Southern history, from the back-to-the-land movement of the 1970s to the rise of fast and convenience foods modeled on rural staples. Edge narrates the gentrification that gained traction in the restaurants of the 1980s and the artisanal renaissance that began to reconnect farmers and cooks in the 1990s. He reports as a newer South came into focus in the 2000s and 2010s, enriched by the arrival of immigrants from Mexico to Vietnam and many points in between. Along the way, Edge profiles extraordinary figures in Southern food, including Fannie Lou Hamer, Colonel Sanders, Mahalia Jackson, Edna Lewis, Paul Prudhomme, Craig Claiborne, and Sean Brock. Over the last three generations, wrenching changes have transformed the South. The Potlikker Papers tells the story of that dynamism—and reveals how Southern food has become a shared culinary language for the nation.
